The hard part about being behind is not the being behind part. It is the fact that we don't get to eat all this great bread because I am behind.</div><div style="text-align: center;"><br /></div><div>Anyway, I made the <span class="Apple-style-span" style=" color: rgb(17, 17, 17); line-height: 22px; font-family:Georgia, 'Times New Roman', Times, serif;"><span class="Apple-style-span" style="font-size: medium;">Vollkornbrot</span></span> bread for the challenge and it was delicious. This is the type of bread I always imagined making when I thought of whole grain bread. It has actual whole grains in it. I must sound so ignorant but I have never bought a whole grain before. I have bought loads of whole wheat flour but never "whole wheat berries". They are so cute - are you allowed to call them cute? - and so nutritional - and so great in bread. I only let the bread dough wait 24 hours before baking. The grains were still a little stiff for my kids but my husband couldn't get enough of it. I think we drove over 2000 miles in 18 days, but had a great time visiting family and Silver Dollar City in Branson, Missouri. The Marvel Cave at SDC is a must see - just amazing.<div><br /></div><div>Bread making has also been on vacation until yesterday when I made a batch of banana bread from HBin5. This is the new family favorite. A nice subtle banana flavor without all the sugar - in fact it only has a little honey - and no white sugar - and still used up all the very soft bananas we had left - gotta love that! </div><div><br /></div><div>I need to catch up on all the BREAD Challenges. I am going to try and make the broccoli and cheddar cheese bread; mesquite bread (I think I can get mesquite flour here in Arizona quite easily); a loaf of volkornbrot; and a loaf of rosemary flax baguette. (I am unfortunately not going to make the gluten free breads - sorry gluten-free friends) </div><div><br /></div><div>I think I need to take a trip to Whole Foods to pick up a few specialty items. Thanks again to<a href="http://bigblackdogs.net/"> Michelle of Big Black Dog</a> for putting this challenge together. This time we were to make Mixed Berry Bread and Whole Wheat Banana Bread.</div><div style="text-align: center;"><br /></div><div>I have to confess that I jumped ahead a few weeks ago and made the Mixed Berry Bread. I was trying to think of way to make blueberry bagels for my son and tried this recipe. Instead of making bagels which I have not had much success at, I turned them into english muffins. My english muffin rings (from King Arthur) helped to make perfect muffins. The first time I made them though I forgot to defrost the blueberries (I only had frozen) so when I added them to the dough it was way to dry and way to cold. I was afraid I had destroyed the whole batch. So instead of throwing it out, I just left it in the fridge and when I went to look the next day, it had actually risen and I could make muffins out of it. These are a hit and I cannot make them fast enough. I am hoping to add those pictures soon. I am anxious to try this recipe as it has no sugar (except honey) unlike regular banana bread which is loaded with cups of white sugar.</div><div style="text-align: center;"><br /></div><div>I did want to add one last thing. As anyone that has been reading this blog realizes, we are big into pizza at our house. Sometimes believe it or not I actually have dough leftover when pizza day comes around. You know that last chunk in the bottom that looks kind of gooey and not quite right. Well, instead of throwing it out (or using it which is still okay) I have been adding it to a new batch. I add the water for the new recipe into the old bucket and use my hand blender to mush it all up into a liquid and then I just add all the other ingredients as normal. Just remember that you can't do this with enriched doughs. It must be the hot weather that has started - over 105. I am just not that motivated to turn on the oven or to go outside and use the BBQ instead. I did make pizza last night for our weekly pizza night - it just wasn't anything that exciting to take a picture of. </div><div style="text-align: left;"><br /></div><div style="text-align: left;">A couple of months ago, I used the BBQ to make pizza and it was great. The high heat and thin crust makes for a nice crispy pizza. You have to be pretty organized though to make pizza on the grill as it cooks really fast. I was having a really busy day on Friday and wasn't able to make any dough but I had dough left over from a week ago that was in the fridge. It has been a long time since I just made the basic dough from HBin5. And after all the blogs about bread I have read, the ideas were spinning in my head as to what I could do with the basic recipe. To me that is one of the great things about this bread baking group - it has really inspired me to think differently about the bread I bake and be willing to try baking lots of different ways (even if there is no recipe).</div><div><br /></div><div>But to start off with I made the HBin5 Master Recipe and followed the directions to make garlic knots. Up this month for the Bread Challenge is Cinnamon Crescent Rolls and Milk and Honey Raison Bread. I didn't make the crescents although I am sure I will sometime in the next few weeks as my son is doing a report on France and has already requested croissants to go along with his presentation.</div><div style="text-align: center;"><br /></div><div>I did make the Milk and Honey Raison Bread although I substituted craisons for the raisons and added twice as many as the recipe called for. I baked the bread in my new oven and pushed the convection button without changing the baking time. This is the first convection oven I have ever had so I didn't realize that I should reduce the time. I put about 3.5 ounces of dough into each ring and let them rise. And the only reason I am posting right now is to motivate myself to start again. It is not that I haven't been making bread - although not as much as usual - rather it has been a long month of sickness (my son, my daughter, my mom and myself), hospitalization (of my Dad who is getting better now) and one broken oven - not to mention the leaking garbage disposal. There have been good things this month too - my daughter got accepted into the school she wanted to go to next year, my son's soccer team won their first All-Star soccer tournament, I got to go to SeaWorld with my son's 6th grade class and my dear husband has stuck it out during this roller coaster of a month. <div><br /></div><div>The only story worth replaying is the oven. Picture this - Easter - 15 people over to eat - oven preheating so I can bake the bread (HBin5 of course) and then the rest of the meal - and me saying, "Why isn't this oven heating up?" My mom sick so can't go to her house - next option - the BBQ. So we cooked the bread, baked the potatoes, asparagus and heated the ham all on the BBQ outside. I must say it turned out pretty well considering - only burned the bread slightly. I ended up having to bake everything in the BBQ for a couple weeks before I was able to buy an new oven. And I am loving my new oven.</div><div><br /></div><div>So now as I am finally starting to feel better (got strep from my son) I am determined to start baking bread and blogging about it again. </div><div><br /></div><div>So if you come over to have some of this delicious bread, be sure to knock because the doorbell doesn't work. I have to start with a confession: I broke my book. There I said it. The binding on my book has broken from using it too much. All that page turning was hard on the binding. Fortunately it broke on the page with the Whole Wheat with Olive Oil Bread because I make that recipe every week for <a href="http://bread365.blogspot.com/2010/03/pizza-on-bbq.html">pizza</a>.</div><div style="text-align: center;"><br /></div><div>On to the challenge. The trickiest part was buying the olives. I bought these olives that were stuffed with pimentos. Baked at 475. Two days later we made the rest of the dough into calzones and that was great too. I am not a big carrot cake fan but I was sure this bread would not taste like carrot cake. I decided to make it onto cinnamon rolls for a after school treat. I omitted the coconut and used craisons for the dried fruit and added walnuts. I rolled it out threw on some extra cinnamon and brown sugar and baked. I think he has at least one every day. He also loves the bread I have been making. So my husband suggested I make blueberry bagels - his favorite. I had tried to make bagels when I first got the ABin5 book and I found them a little time consuming and the boiling a little tricky so I haven't tried them since then. My husband then found the Whole Wheat Mixed Berry Bread recipe in HBin5 (pg. 197) and we thought that would be a good compromise. I could make them in the new <a href="http://bread365.blogspot.com/2010/03/english-muffins-and-more-calzones.html">english muffin molds</a> I got so they would at least be somewhat bagel shaped, just without the hole. We thought that would be great as the cream cheese always seems to fall through the hole anyway.</div><div><div style="text-align: left; "><br /></div></div><div>So I made the recipe. First mistake, I forgot to de-thaw the frozen blueberries before I put them in the mixture. Frozen berries have no juice so it left the dough dry and cold. So I added more water which made it a little soupy. But I let it sit on the counter anyway. After 2 hours not much rise. I thought I would need to throw it all out and start over. The oven just gets the house too hot in the summer. So last Sunday evening, I tried to bake our pizza on the BBQ. It actually turned out well. I only slightly burnt one of the crusts. I made the crusts as I went which added to the chaos. So today after getting my coffee, I made the ritual Friday dough for pizza so we would have it ready for dinner.</div><div style="text-align: left;"><br /></div><div> Last week, I was looking on the <a href="http://www.artisanbreadinfive.com/?p=1683">HBin5 website</a> and saw their delicious cinnamon bread, but also noticed their English Muffins. So I treated myself and bought some <a href="http://www.kingarthurflour.com/shop/items/english-muffin-and-crumpet-rings#">English Muffin molds</a>, some Everything Bagel topping and a yeast spoon. They arrived two days ago. So right before leaving this afternoon to get my kids from school (and I mean the timer had gone off to tell me it was time to pick up my kids from school), I put together the dough for English Muffins. This dough goes together fast. I wasn't even late picking them up - I was maybe third from the end but that still counts as being on time.</div><div style="text-align: center;"><br /></div><div>So at dinner time I made the pepperoni pizza for the kids and calzones for my husband and me. I put left-over ham, sauteed onions, roasted grape tomatoes, garlic and goat cheese inside the calzones. Baked and ate every bite. I love these calzones. I had this sad beet in my fridge just begging me to do something with it. So after taking the advice of other bakers, I used the food processor to shred the beet and that really kept the mess to a minimum. The dough was a cute pink color and I was really surprised after I baked them that the red color dissipated so much. They were really yummy and even my kids ate them. I didn't tell them the "secret" ingredient until after they had eaten them. Living in the southwest, we love avocados and guacamole so I was anxious to try this bread. I wanted to cut the recipe in half but then I put the entire amount of water in by mistake. I knew something was wrong right away when I had a soupy mess. Well, I threw in the other half of flour, yeast and vital wheat gluten and kept mixing. I am writing this as the dough is rising on the counter hopeful that it will still work. Every Friday night is PIZZA NIGHT. Pizza night started out about 15 years ago with our friends who would come over and we would make pizza on a Boboli. I cringe now that I write that because I can't imagine eating those crusts again after making my own crust. From that I moved up to using pre-made pizza dough from various locations. My favorite was from a local Artisan Bread Store where I paid $5 for two balls of pizza dough. It was yummy dough, but once I got ABin5 and then HBin5, I was hooked on making my own pizza crust. It not only was easier and cheaper but tasted great too.<div><br /><div>So every Friday we make a cheese or pepperoni pizza and what I call "left-over" pizza. Left-over pizza is just as it sounds. I look in the fridge and see what's there and put it on top of a pizza. Our favorite combos lately are roasted grape tomatoes, spinach, garlic, onions, and chicken. I also make a fajita pizza if we have left-over fajitas. The second one I used more flour and cornmeal and it slid off just fine. I used a little pasta sauce for dipping and it was delicious. My son spontaneously asked as I was making dinner one night if he could make some bread for cinnamon rolls. I said sure thing so he mixed up a batch of Cranberry Orange Bread that we made into yummy rolls for morning. His sister of course had to help too. This bread is so easy a 12 year old can do it!<div><div style="text-align: center;"><br /></div>It is that time again - time to try some new breads. I was a little hesitant this time and as I was procrastinating I made the bread from the last challenge again. This time I made the apple strudel in the loaf pan and it turned out fabulous. I made it at night and let it rise in the fridge overnight and baked it early the next morning. I think that helped seal it up so it didn't leak at all when baked. Yummy.</div><div><div style="text-align: center;"><br /></div><div>But eventually I had to try these breads. I love chocolate so I don't know why I was so afraid - maybe it was the fear I would eat the whole thing by myself. I made the whole recipe which probably was a mistake since this dough only lasts 5 days. I have a hard time using up dough that fast - especially something like this chocolate one. So after a few days I just made cupcakes as the book describes (except no sugar on top) and you can see them below in the muffin pan. My kids didn't really like them though - not as chocolatey as they appear. My husband on the other hand really loved these. As a I already mentioned I made the previous bread again so I also made more hamburger buns and actually made hot dog buns (see below) this time and they turned out great. I love that bread! But back to the beet buns, after one unsuccessful attempt to buy beets my husband found some. I don't think I have ever even touched a beet before. I just couldn't bring myself to make them before the bread challenge link was up so I might add it at a later time. I had a little bit of trouble adequately mixing it up. I don't want to overmix/knead so I think I err on not enough mixing. There ends up being all these floury chunks in the bottom after rising. I just discard those when making bread but I need to improve my mixing technique.</div><div align="left"><br />It was raining all day so my 3 year old and I stayed home and baked all 3 types. I figured this would be a great after school snack on a cold rainy day (well it is rainy and it did get into the 50s I think - remember this is Arizona). I used all the dough I had left since I wasn't going to have time later to use up the dough and this kind only last 5 days in the fridge. My 3 year old helped spread the apples and 3 raisons. It was supposed to be more raisons but of course someone ate them and only left 3. Why 3? I mean if you are going to eat them - eat them all. Anyway, since I used more dough than necesssary I cut it in half to put in the loaf pan but that made a mess. From this I made a regular loaf of bread but sprinkled poppy seed over the top before baking. Well, my crackers were tasty as you can see by my son's hand grabbing them off the cooling rack instead of the cheese pizza I had just made. The only thing was they were really not what I would consider crackers - they were not really crispy. I made them thin enough. I think that my expectations were just not correct. They would go well with a soup or cheese as I saw some other people do or as little poppers in your mouth as they cool down. I also didn't use enough spice. I started off with two buckets of flour - one whole wheat and one white flour and one empty bucket to mix in. I rolled out a 1 pound piece and it was about 5 feet long. I think next time I would take smaller peices and roll out the 3 pieces to braid individually. The orange flavor was really strong. It is really like a bread (not a pastry) which I like because my kids love it and I love it because there isn't any sugar besides honey. I didn't put the egg wash nor the sugar on top as the recipe called for. We sliced and ate it Saturday as we rushed out the door. I also like that it has whole wheat and wheat germ and cranberries. I eventually make all of the different breads into cinnamon rolls. I just take a chunk, roll it out, throw brown sugar and cinnamon on top, roll up, slice, rise and bake. This picture is what they looked like after I let them rise and before baking. Of course we ate them before I could take the final after picture. To warm up though, the authors have given us a few recipes to try in the meantime. The first one was Pumpkin Brioche. I didn't make it in time to add my link to the Bread Group site but wow this was delicious! I made it in a loaf, I made it freeform, I made it into cinnamon rolls. And they were all eagerly devoured. In fact we ate them before I could even take pictures.<br /><br />So now the next recipe is out: Whole Grain Challah with Cranberries and Orange Zest. I thought if I posted that I was going to make this that I would actually make it in time to add the Bread Group site. I thought that it might be too flaxy tasting but it actually made the bread taste even better. I have one of the new Master Receipe from HBin5 - left after I made bread for dinner last week when my parents came over. It was yummy with the chicken/sausage/veggie stew I made. I have one from the Master Recipe from ABin5 - left after my daughter requested cinnamon rolls to take to school last Friday. And one bucket of pizza dough - left after our traditional Friday night pizza night. I am going to make the rest of the HBin5 Master Receipe right now. I will probably make a pizza after school for the kids snack and so that leaves only one bucket left. Fortunately I bought some more whole wheat flour yesterday at Whole Foods so I can make some more batches from the new bread book! Yummy!! I just have to say it looks great. It is an understatement to say I love this book. I mean I haven't bought so much flour before in my whole life. I make bread! Which if you knew me is quite miraculous. So I am starting this blog over to follow my adventures in making bread, especially since the authors have a new Bread book coming out in less than a week!<br /><br />By the way - this blog previously tracked my family with pictures for an entire year and the BREAD title is actually an acronym that includes the first letter of each person in my family.
